FETTUCCINI WITH PESTO

3/4 lb pasta
1/8 cup basil
1/3 cup pine nuts or walnuts
1/3 cup extra virgin olive oil
1/2 cup parmesan cheese, freshly grated
2 cloves garlic
2 tbs hot water
salt and pepper to taste

Bring large pot of water to boil. Cook pasta according to package directions while you prepare the pesto.
Place basil, nuts and garlic in a food processor or blender and process until finely chopped. With the machine running, pour in olive oil in a thin stream. Add cheese, salt and pepper to taste, and process briefly to combine. Thin with 2 tbs hot water. Toss pesto with hot pasta, cooked and drained, and serve. Serves 4.
