CHICKEN POT ROAST

3 boneless skinless chicken breasts
6 tiny red potatoes, quartered
1/2 medium yellow onion, sliced
1 cup baby carrots

1/2 tsp poultry seasoning
1/2 tsp season salt
1/2 tsp dried parsley
1/2 tsp garlic salt
1/2 tsp dried cilantro
1/4 cup vegetable oil

2 tbs butter

Mix together spices. Add vegetable oil. Pour mixture into 2 quart casserole dish, coating bottom. Add chicken and dust lightly with more of the spices. Arrange potatoes, onion slices and baby carrots around the chicken. Add butter in small portions throughout. Bake in 375 degree oven covered for 1-1/2 hours. Makes 3 servings.
