CHICKEN SATAY WITH PEANUT SAUCE

6 boneless skinless split chicken breasts
1/3 cup light soy sauce
1/3 cup packed brown sugar
1/3 cup creamy peanut butter
1/4 cup lime juice
3 garlic cloves, pressed
1 tsp dried cilantro leaves

In 2 quart bowl, combine soy sauce, brown sugar, lime juice, cilantro and garlic. Add peanut butter and mix well.

Grill chicken breasts, basting with peanut sauce when well cooked. In small saucepan, heat remaining peanut sauce mixture. Serve immediately; Chinese cucmber salad would be a good side. Serves 6.
