4 Cornish game hens
salt and freshly ground black pepper
3 tablespoons Walker's Wood jerk seasoning -- up to 4
1/3 cup dark rum
1/2 cup unsalted butter -- melted
paprika

Wash the hens, pat dry, and cut off the wing tips. Place your finger between the skin and meat and loosen the skin around the hen. Season with salt and pepper. In a bowl, mix the jerk seasoning and rum and rub some under and over the skin; rub in well. Then place in a large plastic bag and let marinate overnight in the refrigerator.

Preheat the oven to 375degF. Place the hens on a rack in a roasting pan and pour about 1/2 cup water in the bottom of the pan to keep the smoke down. Pour the melted butter over the hens, and sprinkle with a little paprika. Roast the hens 35-40 minutes, or until the juices run clear.
