FETTUCCINI WITH PESTO

3/4 lb pasta 1/8 cup basil 1/3 cup pine nuts or walnuts 1/3 cup extra virgin olive oil 1/2 cup parmesan cheese, freshly grated 2 cloves garlic 2 tbs hot water salt and pepper to taste |
Bring large pot of water to boil. Cook pasta according to package directions while you prepare the pesto.
Place basil, nuts and garlic in a food processor or blender and process until finely chopped. With the machine running, pour in olive oil in a thin stream. Add cheese, salt and pepper to taste, and process briefly to combine.
Thin with 2 tbs hot water. Toss pesto with hot pasta, cooked and drained, and serve. Serves 4.
